chicken salad1/4 cup toasted walnuts or almonds or both
2 or 3 pieces of leftover chicken (fried, baked, boiled), skin removed and meat cut or broken into one-inch pieces
an apple, chopped kind of small
3 cloves garlic, minced
a green onion, sliced up
juice of a lime or half a lemon
1/2 to 1 cup olive oil
1/2 tsp salt
black pepper to taste
parsley or cilantro, chopped up kind of big
Mix everything together, adding salt to taste and more olive oil if you need it.
This is good with curry spices, too (cumin, coriander, turmeric, chili), and it's much better really cold.
Don't look for the parsley or cilantro in my picture, because I didn't have any today, since I spent my grocery money on Publix fried chicken instead of herbs. LOL.
